Our Fantastic Dinners at Baia di Trentova...
The B&B is run by Adriana and her husband Oreste, and his brother Domenico. Oreste and his mother Maria do the cooking, using Maria's traditional recipes and Oreste's modern interpretation of them. Adriana does a great job on the baking and desserts. We've been having dinners here, and they've been extraorinary. It is interesting to note that Oreste is a vegetarian, so everything he serves has been prepared many times for the family to taste, until the result is perfect. Every ingredient is sourced fresh and locally. And of course we are the only guests, so we are served as royalty, at the center table in the 5-table dining room.
Thursday night Oreste prepared a vegetarian dinner for us. With our familial connection to meat, we weren't too sure about it, but the dinner was surprising, delicious, and filling. Here's the menu...
Pasta fagioli, served steaming hot in a ceramic crock, delicious

Escarole baked with bread crumbs (gratinata), capers and olives
Mozzarella di bufala served in a pizzaiola sauce

Friday night was a seafood feast. Oreste went to the docks Friday morning to look for the best seafood he could find. While we were eating breakfast, he called Adriana a couple of times to report his success, so she was able to tell us what would be on the menu that night. Here's the menu...
Shrimps, gamberetti, and mussels served with fresh wild asparagus, cherry tomatoes and garlic over a square homemade pasta called pettole (literally shirt tails)
Foccacia marinare, with bits of anchovie
Red snapper baked with grated potato on top
Salad of lettuce, fennel and radish
Alici (sardines) cured in vinegar, then marinated in olive oil, red pepper flakes, garlic, served with fresh mint
Four different kinds of small local fish, including mullet, lightly breaded, pan fried, served whole (see picture on Facebook)
Dessert was macedonia, a fresh fruit salad served in a sauce of limoncello and sugar
We've had several local wines to accompany our dinners, the reds are made from aglianico grapes, the whites from fiano. They have all been excellent. One of the wineries can be seen from the B&B. Apologies to Oreste if we've left out something important in our description. Needless to say, these dinners have been outstanding, truly epicurian journeys of discovery. We will miss Baia di Trentova, Adriana and Oreste and the family, and our amazing royal dinners.
